ATCO Blue Flame Kitchen Lunch ‘n Learn

Have you ever taken a lunchtime cooking class? My friend Robin invited me to join to her for a recent ATCO Blue Flame Kitchen Lunch ‘n Learn. In these weekly, noon-hour demo classes, you’ll learn how to create a few dishes, eat them and get to take the recipes home. At only $20, these courses are great value. And did I mention they include lunch?!

Our gluten-free class started off learning how to make lemony artichoke ATCO Blue Flame Kitchen Lunch ‘n Learn served with some fab Food Should Taste Good Multigrain crackers (gluten-free, of course). I don’t know how I’ve managed to survive without these crackers, but I’m definitely going to pick some up the next time I’m at Costco.

Oh, and we learned a great tip for cutting brie so the cheese doesn’t stick to your knife. Simply put it in the freezer to firm up before cutting (it doesn’t need to be completely frozen). And for cute shapes, use cookie cutters!

Then we moved onto pizza. Anyone who’s tried GF pizza crust knows it kinda blows. But our chef made a recipe from the Simply Gluten-Free blog using Cup 4 Cup flour.

This wheat-free flour developed by Chef Thomas Keller of French Laundry fame, quite simply, rocks. I think it’s the best flour substitute out there. You can find Cup 4 Cup at Williams-Sonoma and occasionally at Community Natural Foods in Calgary.

And for dessert, would you believe gluten-free cream puffs (that taste amazing) are possible? After three courses, we were sufficiently stuffed! Suddenly it was 12:45 and the class was finished. If you’re looking to pick up a few inspirational recipes or just fancy going out for lunch, these lunch n’ learns are tops!
