I almost had it in the bag. Almost. Last week I served up my famous guacamole to a hungry crowd at Clive Burger. There were judges, there were secret ingredients, and there were winners and losers. Sadly, I didn’t take home top honours, but my guac was a hot item, nevertheless. Here’s my recipe for guacamole:
Jody’s Almost Award Winning Guacamole
2 ripe avocados (mashed)
1 small, finely chopped clove of garlic (about a 1/4 teaspoon)
juice from 2 key limes
juice and seeds from half a tomato
1 tablespoon finely chopped cilantro
1 tablespoon finely chopped white part of a green onion
1/4 teaspoon salt
Mix well and chill for at least 30 minutes to let the flavours meld.
If only I had loaded more quac on my buns!
I put guacamole on everything, from burgers to eggs to shrimp. Mookie and Billie Jo from Lite 98.5 won the burger competition and you can try their award-winning combination for yourself.
